Tsubame is Chef Jay Zheng’s intimate Japanese tasting experience in Tribeca. The 18–20 course menu brings the progression of kaiseki together with sushi omakase, following the ingredients available at their best.

The meal follows a thoughtful sequence rather than a fixed list of dishes. Seasonal preparations and sushi share the same evening, with changes in ingredient, temperature and texture guiding the progression.
That is the spirit of omakase at Tsubame: a chef-led tasting that can change with the season. The restaurant opened in Tribeca in 2023 after Chef Jay’s earlier New York projects, Gaijin and Kōyō.
